Smoked Bourbon Fondue

- 5 oz Swiss cheese
- 5 oz Raclette cheese
- 5 oz smoked Gouda cheese
- 2 tbsp cornstarch
- 1 cup dry white wine
- 2 cloves garlic finely chopped
- 2 tsp Dijon mustard
- ⅛ tsp ground nutmeg
- 2 tbsp bourbon
- Bread, apples, carrots, and anything else you'd like for dipping
Shred all three cheeses and combine in a large bowl. Toss to coat with the cornstarch.
Bring the white wine to a simmer in a medium pot. Stir in the garlic, mustard, and nutmeg.
Whisk the shredded cheese into the simmering wine a handful at a time, ensuring all the cheese is melted before adding more. Continue until all the cheese has been incorporated.
Whisk in the bourbon until smooth. Transfer the fondue into a fondue pot or serve directly from the pot.
While still hot, serve the fondue with cubes of bread, apples, carrots, and anything else you'd like for dipping.
