Everybody loves fondue. What’s not to like? Melty, smooth, creamy cheese, a variety of dipping options, and a fun, shared eating experience. What you may not know, however, is how easy it is to make fondue at home. If you have a few cheeses, a little wine, and a splash of bourbon, you have everything you need for a fast, delicious, and downright festive fondue. This fondue uses smoked Gouda for a touch of smoke flavor, perfect for fall. A finish of bourbon adds a hint of vanilla and oak to the creamy cheese. I like to serve this with cubes of french bread, honey wheat bread, apples, and carrots. But there’s almost nothing you can dip in this fondue that won’t taste good.

There are a few tricks to getting a smooth, dippable fondue and not a clumpy block of melted cheese. First, you need to coat the shredded cheese in cornstarch. This helps the cheese melt evenly and stay smooth rather than clumping and separating. Second, use wine as the base. Using wine rather than something like broth or milk is crucial because the acid in the wine keeps the fondue smooth and homogenous rather than coagulated. Last, adding the cheese in stages and whisking until the cheese is melted before adding more keeps the fondue smooth like a cheese sauce and prevents clumps of half-melted cheese from forming.

If you keep to these tricks, you are free to be creative with everything else! What cheese you use, what wine you use, and what foods you use for dipping are all pretty flexible.

Smoked Bourbon Fondue

Smooth, creamy cheese is irresistibly melted together with wine, bourbon, garlic, and dijon mustard for a crowd-pleasing appetizer or intimate meal.

Ingredients
  

  • 5 oz Swiss cheese
  • 5 oz Raclette cheese
  • 5 oz smoked Gouda cheese
  • 2 tbsp cornstarch
  • 1 cup dry white wine
  • 2 cloves garlic finely chopped
  • 2 tsp Dijon mustard
  • tsp ground nutmeg
  • 2 tbsp bourbon
  • Bread, apples, carrots, and anything else you'd like for dipping

Instructions
 

  • Shred all three cheeses and combine in a large bowl. Toss to coat with the cornstarch.
  • Bring the white wine to a simmer in a medium pot. Stir in the garlic, mustard, and nutmeg.
  • Whisk the shredded cheese into the simmering wine a handful at a time, ensuring all the cheese is melted before adding more. Continue until all the cheese has been incorporated.
  • Whisk in the bourbon until smooth. Transfer the fondue into a fondue pot or serve directly from the pot.
  • While still hot, serve the fondue with cubes of bread, apples, carrots, and anything else you'd like for dipping.
