After a big, 2pm Mother’s Day Brunch last weeken After a big, 2pm Mother’s Day Brunch last weekend, I didn’t want to prepare a large dinner for my mom. Instead, I decided to prepare a cheese tasting for her (cheese is her favorite food in the world). 

From left to right: 

Goat Gouda with whipped lemon honey and fresh basil 

Cashel blue with fresh pear, honeycomb, smoked salt

Myzithra with strawberry rhubarb preserves, castelvetrano olives, fresh chives from the garden, rosemary crackers 

Dubliner with Irish stout paired with caramelized onions, raisins, and torn toasted baguette 

Buffalo mozzarella with tomato paste, pesto, and vanilla balsamic vinegar 

Jasper Hill Farm Whitney, melted, with char grilled zucchini and coriander honey 

Jasper Hill Harbison with fresh apple and croissant

Port Salut with quince paste and chili spiced pistachios 

Truffle Pecorino Romano, bruleed with sugar, and everything bagel croissant 

Each group of cheese was paired with a wine as well. It was a lovely way to round out Mother’s Day 🧀💛

Spaghetti Aglio e Olio with Burrata and Toasted Br Spaghetti Aglio e Olio with Burrata and Toasted Breadcrumbs 🍝 🧄 

A simple Italian classic, this pasta is everything you want. Silky, garlicky, cheesy, and savory – its spaghetti at its best.

INGREDIENTS (serves 4)
 
1 lb dry spaghetti
1 whole bulb garlic
⅓ cup olive oil
red pepper flakes to taste
kosher salt to taste
⅓ cup breadcrumbs
2 tsp dried parsley
2 balls burrata

INSTRUCTIONS
 
Bring a large pot of water to a boil. Cook the pasta until just before al-dente, about 8 minutes.
While the pasta cooks, peel and mince the garlic.
Heat ⅓ cup of the olive oil over medium heat in a large saute pan. Add the minced garlic and cook until just barely turning golden.
Stir in few pinches of red pepper flakes (if you like a little heat) and 1 cup of the pasta water.
Add salt to taste (about a teaspoon usually) and allow the sauce to simmer until slightly thickened (3-5 minutes).
In a separate pan warm 1 tbsp of olive oil over medium-high heat. Add the breadcrumbs, parsley, ½ tsp cracked black pepper and ¼ tsp salt.
Toast the breadcrumbs until just golden, stirring often, 3-4 minutes.
When the sauce is slightly thickened, add the boiled pasta to the pan. Stir the pasta into the sauce and allow to simmer until combined and the pasta is finished cooking, about 2 minutes.
Transfer the pasta to bowls. Top with extra sauce from the pan, a sprinkle of toasted breadcrumbs, and half a ball of burrata.
Serve warm, with extra red pepper flakes for optional sprinkling.

We planted our garden today, and that got me inspired to talk about this delicious white lasagna, with an amazing basil béchamel.

2 15 oz. cans black beans
2 7 oz. cans tex-mex or fiesta corn
1 ½ cups chopped fresh tomatoes
¼ yellow onion, finely chopped
4 green onions chopped
1 avocado roughly chopped
2 packs Good Seasons Italian Dressing Seasoning
¼ cup white vinegar
½ cup olive oil

INSTRUCTIONS

In a large bowl, mix together the black beans, corn, tomatoes, yellow onion, green onions, and avocado.
In a separate bowl, whisk together the seasoning packets, vinegar, and oil.
Pour the dressing over the veggies and thoroughly mix.
Serve as is or allow to marinate in the refrigerator for a few hours or overnight.

Lavender Crème Brûlée: INGREDIENTS 8 large e Lavender Crème Brûlée:

INGREDIENTS
 
8 large egg yolks
¾ cups sugar
¼ tsp kosher salt
2 tbsp vanilla extract
4 cups heavy cream
1 tbsp + ¾ tsp edible dried lavender

INSTRUCTIONS
 
Preheat the oven to 320°F.
Whisk the egg yolks, ½ cup of sugar, salt, and vanilla in a medium bowl.
Heat heavy cream and ¼ cup sugar in a medium saucepan over medium heat.
Add the lavender to the cream and let this mixture come to a slight simmer along the edges of the pan. Do not let the cream boil.
Once bubbles begin to form along the edges and the surface is steaming, remove the saucepan from the heat.
Slowly stream in about ¼ cup of the heated cream to the egg yolks, whisking vigorously.
Repeat with another ½ cup of cream.
Add the warm yolk mixture into the saucepan with the cream, stirring constantly, and whisk vigorously to combine.
Pour this custard through a fine mesh sieve into a large bowl. Discard the lavender pieces.
Ladle the custard evenly among 8 (6 oz.) ramekins.
Place the ramekins in a deep roasting pan and place them in the oven on the second to lowest rack.
Pour hot water into the roasting pan until the water reaches halfway up the sides of the ramekins, being careful not to pour any water into the actual ramekins.
Bake at 320°F for approximately 1 hour, or until the creme brulée is set and the centers only tremble slightly when shaken. If after an hour, the creme brulée is still not set, increase the heat to 350°F for another 10 minutes or so, keeping an eye on them.
Let the creme brulée come to room temperature before covering with plastic wrap and placing in the refrigerator to chill for at least 3 hours (or overnight).
With a kitchen torch, brûlée the tops and serve.

INGREDIENTS

-2 Eight-oz. tubes crescent dough sheet
-⅔ cup jam (total) can be divided among 2 or 3 types, I used blackberry jam, onion and garlic jam, and chile fig jam
-8 oz. wheel brie cheese
-1 egg
-kosher salt
-freshly cracked black pepper

INSTRUCTIONS
 
Preheat the oven to 375°F.
Carefully open and place each crescent dough sheet onto its own piece of parchment paper. Gently roll out the sheets until approximately 15 inches x 15 inches.

Slide one of the dough sheets, including the parchment paper, onto a baking sheet.
Place the wheel of Brie into the center of the dough sheet. Spread the jam or jams onto the dough surrounding the Brie, forming an even layer to each edge.

Carefully lift the second crescent dough sheet off of its parchment paper and lay over the Brie and jam. Press along the dough, encasing the Brie in dough and covering the jam. If there are any large air bubbles, you can use a knife to poke a small hole, pressing out the bubble.

Using a knife, slice the dough surrounding the Brie, creating 1 inch wide strips extending out from the center.
Twist each dough strip 3-4 times, creating a swirl.
Beat the egg with 1 tablespoon water. Brush the dough with a thin layer of egg wash.

Sprinkle salt and black pepper over the egg wash.
Transfer to oven and bake, 15-17 minutes, or until the dough is evenly browned.
Remove from oven. Use a knife to slice and remove a circle of dough from the top of the Brie.

Serve immediately, pulling off twists of bread and dipping into the melted Brie.

Celebrate with two classic cocktails enjoyed around these races: the Mint Julep and the Oaks Lily 🍸 

Everyone knows the Mint Julep is the Derby’s classic cocktail, and the Kentucky Oaks is a race for fillies traditionally held the day before the Kentucky Derby. The Oaks Lily is its signature drink.

Recipes below ⬇️ (and yes, that is the wrong glass and ice for a traditional mint julep, but I wanted you to be able to see the colors of the drink; there’s a glass of crushed ice ready to pour it into right behind it 😂)

Mint Julep:

INGREDIENTS
 
1 small bunch mint leaves
¼ oz. simple syrup
2 oz. bourbon
crushed ice
bitters (optional)

INSTRUCTIONS
 
Muddle a small bunch of mint leaves at the bottom of your glass with ¼ ounce simple syrup.
Top with the bourbon, then fill the glass with crushed ice and stir.
Top with more crushed ice, a few leaves of mint, and a dash of bitters if desired.
Serve and enjoy.

Oaks Lily:

INGREDIENTS
 
1 ½ oz. vodka
½ oz. triple sec
3 oz. cranberry juice
½ oz. freshly squeezed lemon juice
½ oz. simple syrup
blackberries, for garnish
lemon slices, for garnish

INSTRUCTIONS
 
Combine all ingredients except the blackberries and lemon slices in a tall glass.
Top with ice and stir to combine.
Garnish with blackberries and a lemon slice.

INGREDIENTS
1 pound sugar snap peas
1 small head radicchio
3 green onions
2 tbsp mayonnaise
½ tsp freshly cracked black pepper
1 ½ tsp kosher salt
1 tbsp honey
¼ cup olive oil
¼ cup white wine vinegar

INSTRUCTIONS
Thinly slice the sugar snap peas, radicchio, and green onions.
In a large bowl, combine the peas, radicchio, green onions, mayonnaise, black pepper, salt, honey, olive oil, and white wine vinegar.
Stir to combine. Taste, and add more salt, oil, pepper, or vinegar if desired.
Refrigerate, or serve immediately.

The food was fresh and flavorful, and I would definitely try some of the other dishes too when I’m in the area. Using @insider.eats to order and grab the takeout was nice, and they have lots of options for international food around the city.

Pasta salad can be a polarizing dish. Creamy or oil-and-vinegar? What shape of pasta to use? Cheese or no cheese? Love it or hate it? Personally, I think this Lemon-Basil Zucchini Pasta Salad puts many of those questions to rest and could please even the most avid pasta-salad-hater. This version starts out like many others, with a short, bite sized pasta – but then the flavors head in a new direction. Loads of bright, lemony flavor mingle with herby basil, crisp fresh zucchini, peppery arugula, and creamy mozzarella for a pasta salad like you’ve never had before. This salad tastes equally good cold, room temperature, and warm (I know, its hard to wait for the pasta to cool sometimes). Bottom line? Give this recipe a try and prepare to redefine what you thought pasta salad could be.

INGREDIENTS
 
24 oz. uncooked short pasta
olive oil
2 cups raw zucchini, chopped
1 cup baby spinach, chopped
1 cup baby arugula
½ cup basil, finely chopped
2 cloves garlic, finely minced
2 large lemons, zested
2 tbsp white wine vinegar
1 cup fresh mozzarella or burrata, torn
¼ cup scallions, chopped
½ cup salted, roasted, sunflower seeds
kosher salt
black pepper

INSTRUCTIONS
 
Bring a large pot of water to a boil.
Cook the pasta according to package directions. Drain, and toss lightly with olive oil.
Allow the pasta to cool completely.
When the pasta is cool, in a large bowl combine the cooked pasta, ¼ cup olive oil, zucchini, baby spinach, baby arugula, basil, garlic, zest and juice of both lemons, white wine vinegar, mozzarella, scallions, sunflower seeds, and salt and pepper to taste. Taste, and add more oil or vinegar if desired.
Serve, at room temperature or chilled.

These Lemon Ricotta Muffins with Vanilla Crumble are good. Really good. As someone who tends to prefer lemon in savory applications, there’s only a few lemon desserts I really like, one of them being a lemon cake from a local Italian restaurant. That was the flavor I tried to replicate when creating these muffins. Tender, moist, and fluffy, with enough citrusy flavor to highlight the lemon but not so much that it tastes fake. I think I struck the perfect balance here. The ricotta keeps these muffins from drying out and adds a bakery-like richness. And that vanilla crumble on top adds just a little crunch and extra sweetness – definitely don’t skip it. They’re the perfect snack on a spring afternoon, as part of a Mother’s Day brunch, or anytime!

Recipe:

INGREDIENTS
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup sugar
1 stick salted butter, softened
1 cup whole-milk ricotta
1 large egg
4 tsp lemon zest (from about 4 lemons)
2 tbsp lemon juice
½ cup milk
Vanilla Crumble
⅓ cup sugar
2 tbsp salted butter, melted
1 tbsp flour
1 tsp vanilla bean paste or extract

INSTRUCTIONS
 
Preheat the oven to 350°F.
Sift together the flour, baking soda, baking powder, and salt.
In a separate bowl, using a hand mixer or stand mixer, whip together the butter, sugar, lemon zest, and ricotta until well combined.
Mix the egg, lemon juice and milk into the ricotta mixture.
Fold in the flour mixture, ½ cup at a time until just combined.
Spray a muffin pan with non-stick spray or line with paper liners.
Evenly scoop the batter into the muffin pan, dividing it equally amongst the cups.
Make the Vanilla Crumble:
Mix together the sugar, melted butter, flour, and vanilla. It should form a thick paste.
Sprinkle this crumble over the tops of each unbaked muffin, dividing evenly amongst the 12 muffins.
Bake the muffins, about 18 minutes or until a toothpick inserted into the center comes out clean.
Serve and enjoy.
