The end of summer brings with it a variety of fruit harvests. At the grocery store lately, I’ve seen quite a few interesting stone fruits, like apriums and pluots – hybrids between plums and apricots in various percentages! Of course, I had to try these out. Also, our fig tree is absolutely overflowing with fresh figs. It seems there are two to three new ripe figs ready to pick each day. This abundance of produce led to this recipe – Fig and Stone Fruit Toasts with Black Pepper Honey. I wanted a way to enjoy all of these juicy fruits that was cozy yet fresh. Grilled bread and creamy mascarpone are the perfect backdrop while peppery honey elevates the fruit’s natural sweetness. Make these toasts to celebrate the summer’s final harvest!

I love grilled bread, especially as a base for fresh ingredients. Something about the crisp, nutty bread just perfectly complements the sweet, fresh, juiciness of tomatoes, peaches, or figs. For these toasts, I also added mascarpone cheese. I love mascarpone for its impossibly velvety texture and mild flavor.

I was so excited to try pluots and aprium when I saw them at the store. The ones I found seemed to be a little bit more plum-like than apricot-like, but they were both delicious. Plus, the variety of colors and textures make these toasts so beautiful.

And you cannot forget that black pepper honey. A drizzle of honey brings out the sweet notes from the fruit, but the black pepper is the real star here. The pepper complements the mildness of the mascarpone and the fruitiness of the figs perfectly. Folding the pepper into honey helps to smooth out the punch and temper the intensity. You can’t skip this step!

Crispy grilled bread, topped with creamy mascarpone, sweet and juicy fruits, and bright, peppery honey. It's a simple snack, side, or meal that lets the flavors of the season shine.

Ingredients
  

  • 4 slices hearty bread
  • 1 tbsp olive oil
  • 3-4 medium plums, peaches, apricots, pluots, or apriums
  • 3 medium fresh figs
  • 3 tbsp honey
  • 2 tsp freshly cracked black pepper
  • 1 pinch salt
  • 4 tbsp mascarpone cheese

Instructions
 

  • Brush both sides of each piece of bread with a little olive oil. Grill over high heat until toasted, 1-2 minutes per side.
  • Slice the figs and stone fruits, about ¼ inch thick.
  • Stir the freshly cracked black pepper and a pinch of salt into the honey.
  • Spread each slice of bread with 1 tablespoon mascarpone, top with fig and stone fruit slices, then drizzle with the black pepper honey.
